Here we go again – Goofy’s Race and a Half Challenge 2013

Last night, I registered for Goofy’s Race and a Half Challenge in January 2013. It’s official, I will be going for my second Goofy race! The Goofy race is part of Disney’s annual marathon weekend. It involves completing a half marathon on Saturday and then a full marathon on Sunday. So over the course of two days, I will be logging a total of 39.3 miles.

What’s the draw? For me, I like the challenge of running back to back races and where better to run than the ‘Happiest Place on Earth’? You get to run through the parks, there are characters on course, tons of live entertainment and if you time your full marathon just right, you might even get to take a break mid-race and ride a roller coaster! Let me tell you, Disney knows how to put on a race. But more importantly, marathon weekend is the one of the few opportunities I get to run with friends who live across Canada and the US. We have a ton of fun hanging out at the parks, during the race, and of course celebrating afterward!

So here we go again! I’ll keep you posted on my training progress over the next eight months or so (yikes!) . Even though it’s my second Goofy, I have to say that I’m still a little nervous but definitely looking forward to the experience!

Chocolate Peanut Butter Pie

Chocolate and peanut butter. Do you even have to ask? Well, you know something’s good when you’re eating the pie filling out of the mixing bowl and deciding whether you should actually continue making the pie or just eat the filling by itself. And you know it’s really good when you give a piece of the finished pie to someone who doesn’t like chocolate with peanut butter and they eat the whole thing, pie crust and all. Bacon wrapped turtle hamburgers

You know the problem with running after work? I mean besides the fact that I’m tired and less motivated to run. Everyone else is making food and the smell of dinner just wafts onto the streets. And I’ve noticed now that the weather is warming up, lots more people are turning on their barbeques. I love the smoky smell of things grilling and it got me thinking about what I could throw onto my own barbeque.

Have you ever watched those ‘Epic Meal Time‘ videos where they’re making those gigantic creations with bacon, ground meat and everything but the kitchen sink? Unexpected Easter treats – La Maison du Chocolat

For years, my mom would make us baskets filled with little Easter goodies and treats. She does this even though we’ve long passed the age of painting eggs and searching for chocolate around the house. Every year, we smile and say “Oh mom!” but secretly we love feeling like little kids and scarfing down chocolate. I mean, how many times a year do you really get to eat unlimited quantities of chocolate? (I think there are three chocolate related occasions but I’m not counting) So imagine our surprise this year when we didn’t get ANY baskets. Not a single chocolate egg or colorful jelly bean to be found anywhere in the house. My mom was so busy preparing for a potluck that we were left out. A chocolate-less Easter or so I thought.

Hot Cross Buns

Happy Easter everyone!

I’ve been seeing hot cross buns for sale in grocery stores for weeks now. So tempting! I finally broke down and made a batch. I couldn’t resist! Traditionally, hot cross buns are made and eaten on Good Friday or Easter Sunday but I say they’re good for whenever you feel like eating them. I think this would be a great recipe to serve for a brunch. Who doesn’t like fresh bread?

Easter nest cupcakes

I love this time of year! It’s warm enough to go outside without a jacket, there’s more sunshine, flowers are starting to bloom, and then there’s Easter. The sight of colorful eggs, chocolates and hot cross buns instantly brings back fond childhood memories. Thoughts of Easter egg hunts and eating chocolate all bring a smile to my face. Strawberry Rhubarb Apple Streusel Pie


I have to admit that I was skeptical about a pie with rhubarb. Strawberries and apples? I like them. Rhubarb? I’m not so sure. I’ve always thought of rhubarb as a vegetable and I’ve never associated vegetables with desserts. It’s kind of like pumpkin pie or carrot cake – don’t they just exist so that people can eat whipped cream and cream cheese frosting? I’m kidding! Pineapple Coconut Banana Loaf

As a runner, I always have bananas in my kitchen. Anyone who runs knows that they’re the perfect food – great source of energy, easy on the stomach and they contain potassium which can help to prevent cramping (we lose potassium through sweat). Last week, I wasn’t able to run as much because I had tweaked my knee slightly. It turns out I just needed a bit of rest and my knee was fine, but I had several left over bananas.
