Banana Chocolate Chip Protein Pancakes

Most runners who complete a race take a banana at the finish and eat it then and there. Not me. No, I’m not hoarding bananas because that would just be wrong. I just don’t like the taste or texture of raw bananas. Too mushy and squishy for me. Yuck. So at the end of the Sporting Life 10K, I ended up with a banana and a bagel. The bagel was gone in about 4.95 seconds (I’m kidding) but that banana was headed off for bigger and better things. Like what? How about banana chocolate chip protein pancakes! Sounds good to me! Chocolate Peanut Butter Pie

Chocolate and peanut butter. Do you even have to ask? Well, you know something’s good when you’re eating the pie filling out of the mixing bowl and deciding whether you should actually continue making the pie or just eat the filling by itself. And you know it’s really good when you give a piece of the finished pie to someone who doesn’t like chocolate with peanut butter and they eat the whole thing, pie crust and all. Unexpected Easter treats – La Maison du Chocolat

For years, my mom would make us baskets filled with little Easter goodies and treats. She does this even though we’ve long passed the age of painting eggs and searching for chocolate around the house. Every year, we smile and say “Oh mom!” but secretly we love feeling like little kids and scarfing down chocolate. I mean, how many times a year do you really get to eat unlimited quantities of chocolate? (I think there are three chocolate related occasions but I’m not counting) So imagine our surprise this year when we didn’t get ANY baskets. Not a single chocolate egg or colorful jelly bean to be found anywhere in the house. My mom was so busy preparing for a potluck that we were left out. A chocolate-less Easter or so I thought.

Easter nest cupcakes

I love this time of year! It’s warm enough to go outside without a jacket, there’s more sunshine, flowers are starting to bloom, and then there’s Easter. The sight of colorful eggs, chocolates and hot cross buns instantly brings back fond childhood memories. Thoughts of Easter egg hunts and eating chocolate all bring a smile to my face.
