Wordless Wednesday – Running
Speculoos Banana Chocolate Chip Muffins
The other day, someone asked me why I wasn’t posting recipes anymore. I didn’t think much of it until someone else asked me and then another person asked. So why haven’t I been baking? For starters, I’ve been trying to clean up my eating. Then I was also busy training for Goofy’s Race and a Half Challenge in January. Training? What’s up with that? I know there have been recent blog posts that make it seem the races are a walk in the park (pardon the pun) and not a whole lot of training is required. But believe me, you do have to train to complete a marathon, Disney or otherwise. Behind the theme parks, characters and the fluff of the tutus, you are out there walking or running 13.1 miles for a half marathon and double that distance for the marathon. It’s not like you can wake up, jump into the race at mile 25 and claim that you’ve run an entire marathon. And while it is true that you’ll get a medal regardless of whether you officially finish a Disney race, that isn’t the point. Anyway, I digress. If you are seriously training, then you know how little time and energy you have on the weekend for things besides running and napping. That’s where I’ve been and that’s what I’ve been doing. But enough about that, let’s talk about the good stuff! The kind of stuff you can eat and not feel guilty about after a good long run – muffins.
Race Report: Disney World Marathon 2013

The second day of the Goofy Race and Half Challenge started at bright and early at 2:20AM. Originally, the plan was to be up by 2:00AM like I was for the half but I ended up hitting the snooze button more than once. Getting up that early is tough but getting up for 2AM twice in a row, on four hours of sleep was especially tricky. But I managed to get up, shower, dress and eat my breakfast. Race Report: Disney World Half Marathon 2013

The Disney World Marathon in January is one of my favourite Run Disney events to do. This year, I had signed up for the Goofy Race and Half Challenge which involves running the half marathon on Saturday and the full marathon on Sunday.
I arrived at Disney World late Tuesday evening and spent the next few days hanging out with friends and relaxing before the race. Thursday morning, several of us headed over to the Health and Fitness Expo at the Wide World of Sports to pick up our bibs and do a bit of shopping. Race Report: Disneyland Half Marathon 2012

On Sunday Sept 3rd, I ran the Disneyland Half Marathon. You’re probably wondering, why all these Disney races? Well, Disney gives out a bonus “Coast to Coast” medal to anyone who’s participated in races at both Disney World and Disneyland in the same year. Since I had done the Goofy Race and a Half Challenge in January, I figured this would be the perfect year to run the Disneyland Half and collect my Coast to Coast medal. Well, I’m off to Disneyland to run the half marathon this Sunday! It’s my first time running at Disneyland and I’m so excited! The forecast is calling for a high of 95F (32C) and a low of 70F (21C). Yikes! Do I run faster to beat the heat or go slow and keep cool?
But don’t go anywhere! I have a few posts prepared including one for a granola recipe that I think you’ll really like. I call it Tropical Protein Loaded Granola. Stay tuned! Have a great long weekend! See ya real soon!
Race Report: A Midsummer Night’s Run – 30K

On Saturday August 18, 2012, I took part in the Midsummer Night’s Run 30K. The Midsummer Night’s Run is one of my favourite races to run because it’s generally well organized and on the smaller side. Milk Bar’s Cereal Milk
I’m slowly working my way through the Momofuku Milk Bar cookbook. I really enjoy making Christina Tossi’s creations. Her recipes are easy to follow and remind me so much of all the foods I loved to eat as a child. The Cereal Milk recipe is exactly that. I used to (and still do) love drinking the milk right out of the bowl after it had been soaking in cereal. Forget the cereal because that just turned soggy within minutes. But I could drink that sweetened milk all day long! Well, Christina Tossi has figured out a way to recreate just that.
The recipe is fairly straightforward. You’re toasting a large handful of Corn Flakes, then steeping them in milk. Add a little bit of sugar and a pinch of salt and voila! Cereal Milk. That’s it. Four ingredients and you’re there. The end result is a glass of milk that really does taste like it’s been sitting in the bottom of a cereal bowl. It’s a little bit sweet with a hint of the toasted Corn Flakes. And for those of you who run, it’s a nice change from chocolate milk. Perfect with a cookie or two as an afternoon treat.

Moroccan Chicken Stew with Whole Grain Teff
This Saturday, I’m going to be running a 30K race – The Midsummer Night’s Run. It’s one of the few races that I run for charity — The Hospital for Sick Children and if anyone wants to sponsor me or donate here’s the link (just had to throw that in there). A big part of preparing for the race, or any physical activity for that matter, is getting a handle on your nutrition. You want to make sure your body is getting the right balance of nutrients and enough energy to sustain you. Part of the fun of running is being able to carb-load, but you want to make sure you’re getting your carbs from a good source as well as getting some protein in.
