Speculoos Banana Chocolate Chip Muffins

The other day, someone asked me why I wasn’t posting recipes anymore. I didn’t think much of it until someone else asked me and then another person asked. So why haven’t I been baking? For starters, I’ve been trying to clean up my eating. Then I was also busy training for Goofy’s Race and a Half Challenge in January. Training? What’s up with that? I know there have been recent blog posts that make it seem the races are a walk in the park (pardon the pun) and not a whole lot of training is required. But believe me, you do have to train to complete a marathon, Disney or otherwise. Behind the theme parks, characters and the fluff of the tutus, you are out there walking or running 13.1 miles for a half marathon and double that distance for the marathon. It’s not like you can wake up, jump into the race at mile 25 and claim that you’ve run an entire marathon. And while it is true that you’ll get a medal regardless of whether you officially finish a Disney race, that isn’t the point. Anyway, I digress. If you are seriously training, then you know how little time and energy you have on the weekend for things besides running and napping. That’s where I’ve been and that’s what I’ve been doing. But enough about that, let’s talk about the good stuff! The kind of stuff you can eat and not feel guilty about after a good long run – muffins.

Homemade Spicy Rosemary Garlic Butter

I know a lot of you who are avid bakers have had stand mixers for ages. I’ve had mine for less than a year but what a difference it makes! I love the large bowl and being able to leave it running while I’m making stuff like meringues or whipping cream. It’s nice being able to walk away even if it’s only for a minute or two just to wash your hands or start prepping something else. The downside is that I have a short attention span and I get easily distracted. With my hand mixer, I couldn’t WAIT to let go of it — it was loud, messy, heavy and I didn’t have control over the speed. It either mixed things on fast, faster or too fast. Whole Wheat Blueberry Buttermilk Pancakes

My dad was away last week and I thought it would be nice for my mom and I to spend some time together, so we went to a well-known breakfast joint.  Why not have someone else do the cooking, clear the table and wash the dishes? A good idea, in theory. The actual breakfast and service left a lot to be desired. I ordered my favourite: blueberry pancakes, while my mom ordered an omelet. It took the kitchen nearly 25 minutes to complete the order and when the food arrived, it wasn’t good. You know how some people make jokes about burning toast. Well, the toast wasn’t burnt but it was rock hard, and my pancakes were cold and somehow hard on the edges and soft in the middle. I couldn’t figure that one out. If a breakfast place can’t make pancakes or toast properly, they’re in big trouble. The lady the restaurant is named after would not be happy to know one of her franchises wasn’t even able to make toast or pancakes properly. Oh c’est la vie, I guess. Oops, I might have said too much. In any case, I decided to make breakfast at my house this weekend. Except… I was out of white flour.
