Tropical Protein Loaded Granola

Remember when granola was healthy? I don’t. As far as I remember, granola always had chocolate chips, marshmallows or even better: granola bars that were dipped in chocolate or caramel and decorated with some kind of frosting. As a kid, I LOVED putting granola in yogurt or anything else because it was loaded junk — it was like eating dessert while being “healthy”. Or at least that’s how I’d try to trick my mom into buying me some. These days, I’m trying to keep things healthy and stay away from the sweets. I’m temporarily saying no to the chocolate chips. Peanut Butter Oatmeal Chocolate Chip Protein Cookie Balls

Looks like July is here and I hope everyone’s summer is going well so far! I have no complaints except for the excessively hot weather. Don’t get me wrong, I’ll take the heat over the cold and snow any day, but I love baking and running. Especially with baking, I’ve only been turning on my oven when I absolutely have to. Banana Chocolate Chip Protein Pancakes

Most runners who complete a race take a banana at the finish and eat it then and there. Not me. No, I’m not hoarding bananas because that would just be wrong. I just don’t like the taste or texture of raw bananas. Too mushy and squishy for me. Yuck. So at the end of the Sporting Life 10K, I ended up with a banana and a bagel. The bagel was gone in about 4.95 seconds (I’m kidding) but that banana was headed off for bigger and better things. Like what? How about banana chocolate chip protein pancakes! Sounds good to me!
